I am really not a fan of the style of artisanal bread that's popular right now -- I'm talking about the 'bold bake' style, that is dark and dry with the super-thick leathery crust. What you get from places like Blackbird, Bà Nội, and Dear Grain.
I know it's heresy to not like those places, but I prefer the light bake style with the thin brittle/shattering/crackle type crust.
