As apprehensive as I was about it, last week I broke down and bought some. One package sat in the fridge for six straight days. Once I realized this oversight, I prepared myself for disappointment as the sell by date was the next day.

To my surprise it still smelled fresh. My apprehension stems from years of buying the costco cryovac and it smelling borderline rancid the same day I brought it home. Now I am perplexed; why does costco cryovac chicken smell so funky? I had chalked it up to the cryovac process, but now I know thats bunk. What gives?

Started this three weeks ago yesterday. Day three I saw some bubbling, but none since. Thought I wasn’t feeding enough, so I added two Tbsp white sugar instead of 2 tsp daily and did that for a week (starting week two.) Still didn’t see any action, so I started adding double the ginger and no sugar a week ago.

Now the jar is nearly full, and I am near throwing it out. It doesn’t smell bad, has not grown mold or anything else for that matter, and still tastes slightly sweet. Should I just pour into a larger glass jar and add more water (which has always been distilled from day one)? I thought I would be making ginger beer by now, with a bug fully formed. 😩
