My sister said it was perfect.........the 2nd best thing i have cooked so far. With nothing but flavors from whole spices, pinch of garam masala and curd this dish really hit the spot! Nothing else🌜🤌

Recipe:-

Ingredients>

Mutton 1kg

Basmati/pulao rice(washed and soaked well)

Onion(4)

Ginger about 2-3 inch

Garlic 12-15 whole cloves

Whole spices [coriander, sauf, jeera, dalchini(1-2), badi elaichi(1-2), choti elaichi(5-6), bay leaf(1), laung(4-5) and black pepper]

Curd (half bowl)

Garam masala powder

Green chillies

Cooking>

For yakhni:- In a pressure cooker add some oil and ghee(optional) then add the whole spices and give it a mix. Add thinly sliced onion and ginger and whole garlic cloves and your mutton and mix on high heat (2-3 mins) don't let it get brown. Add warm water till it completely submerges the mutton, add salt and pressure cook it till it is 90% done.

Then let the steam out naturally and take out the mutton pieces and strain the remaining to get your yakhni.

For dum:- Add oil and ghee then add thinly sliced onions to it and turn golden brown. Once that's done add sliced green chillies as per your requirement and mutton. Fry it on high heat for 2-3 mins then add well beaten curd and pinch of garam masala powder. Cook it till the curd is done then add the yakhni and rice. Adjust salt at this stage and cook it on dum for 15 mins. That's it then enjoy✨✨

NOTE>>>> Rice to yakhni ratio = 1 : 1.5 cups. I took 3 cups of rice so 4.5 cups of yakhni with the same cup.

For dum you can tie a cloth on your lid to let it soak the steam for better results
