Artorias didnt die, he gave up his Shield to protect his companion, Sif, leading to Artorias being corrupted and eventually being taken by the Abyss.

In his earlier stages of abyssal corruption, his will was strong enough to still hunt down abominations of Humanity, created by Manus.
