Easy meals with baby and toddler?

Hello! Hoping some other parents have suggestions for easy weeknight meals. I have a 2.5 year old who is a decent eater (but not the most adventurous with new foods) and a 12 week old baby. My baby is at the age where he really isn’t napping more than 15-30 minutes at a time and he’s up a lot at night so I’m really struggling to get dinner prepared most days. But i’m also really sick of making my toddler eggs and having cereal myself. Looking for all your ideas for easy weeknight meals! Bonus points if I can make a big batch and have leftovers!

Looking for some advice. My baby is 11 weeks old and my maternity leave ends in 2 weeks, at which point my husband will be taking over baby care for several weeks during his leave. After that baby will spend some time with grandma and then ultimately start daycare around 6 months old.

The situation: I have been pretty much exclusively nursing with occasional bottles to try to get baby used to bottles (although I’m panicking a bit about not having done enough bottles - that’s a question for another day 😅). I’ve been trying to work on consolidating feeds but baby seems to be more of a snacker, he likes to take a feed after waking and often a smaller one before each nap. I feel like this results in less hunger after naps which perpetuates the smaller feeds throughout the day. I’m worried that this situation makes it more difficult to transition to bottle feeding because it’s not as easy as just whipping out the boob if needed before naps. I’d also love to get to a point where I can feed baby and then hand him over to my husband to go out for a run or take my toddler outside and not have to worry about needing to nurse baby again in 45 minutes.

I know breastfeeding is an on demand thing, I always want to feed a hungry baby, and I know this is all temporary. But i’m curious if others have gone through a similar situation and have advice?

ETA: Somewhat unrelated but I also feel like my baby can only self soothe for naps in his bassinet (put himself down from awake) if i’ve just fed him!
