Enchiladas, roasted corn, rice, black beans, and guac. All homemade (except for the chips and tortillas)
Guac looks basic but my process is to puree onion, jalapeno, garlic, and lime juice, then remove most fibers and squeeze to eave almost exclusively juice to flavor the avocado. + salt and pepper
Enchilada sauce was guajillo, ancho, chile de arbol, white onion, garlic, mex oregano, chicken stock, dash of vinegar and 1/2 tbsp lard before blending and a long simmer
