I'm a Tonkotsu addicted, but it takes so long to do and between full time job and family it's hard to find time.

Kids wanted ramen though so i had to find a solution, behold my first ever Tori Paitan. I had to compromise on the chashu as i had none, so i pivoted on a sliced pork loin i had in the freezer, thawed and braised on a pan with some Soy sauce, Sake, Mirin, dash of water, salt and pepper.
