To be honest, I am actually not entirely sure, but I would be curious to see what you all think

Maul seems mainly sadistic to Obi-Wan Kenobi and people he gets revenge on, but largely indifferent to others

Dooku, doesn't seem overly sadistic, but the rots novelization describes him as such

Grievous in the canon definitely, but EU more a Vader type

Grand inquisitor, possibly, can't tell if he's a soldier or someone who enjoys it

Vader, it's hard to tell. He's never really happy, maybe a lot of what he does is to deflect his own self loathing, although his methods are beyond excessive

Tarkin, doesn't really seem like a sadist to be honest. He seems mostly Indifferent to what he does, he simply thinks mass murder and genocide are the easiest tools to work.

Krennic, I can't tell, a bit of a suckup upwards, but a bully downwards. A lot of what he does seems to be ego boost but it's hard to tell if he's a sadist

Hemlock is very cold which can seem indifferent, but he often goes out of his way to be coldly cruel even when it isn't necessary.
