Gluten free sour dough thoughts?

This is the recipe from the art of gluten-free bread, in particular the country white sourdough bread recipe. I’ve made it a few times, but it seems to be not buoyant enough. What do people think? How can I make it better?

So people say not to get these used, but... really? Where do all the used one go? Seems like a waste to not reuse. What are your thoughts?

Then, what's the over / under on infant seat vs one that grows with the baby? Seems more eco to get the non infant one that just grows with baby no?

I plan on using cloth diapers up until my kid starts eating solid food at which point I’m going to have to have them in daycare and I’m not sure they will deal with cloth diapers there. Doing some research for disposable diapers that are not horrific. I’ve heard about many of them, but never heard of Hiro… does anyone have an opinion on them? Are they really this good for the planet?

I am looking to get some second hand maternity clothes rather than buy all knew. Is anyone out there looking to part with some or know where I should look? I like in the Prospect Heights / Crown Heights area. In normal non pregnant times, I am a 28" Pant and generally wear a small or medium top and bottom. Thanks!

I am a huge Mamdani fan but I REALLY want a facelift on composting in NYC. Our current system is a joke and it's ruining our planet. I go to other major cities all the time and they have managed to sort composting. Even Seattle had compost options in the SUBWAY stations!

Adams completing stripped down and deleted the GROW NYC system but does anyone know what sort of activism is taking place to push for better sanitation and particularly compositing in NYC?

The brown bins in my building are full of plastic and I know they all just go to the landfill.

Any help is appreciated!

I'm going to be a parent soon and I'm hoping to buy / obtain a lot of my baby stuff second hand both for financial and also eco reasons. I remember a friend used Park Slope Parents FB group a decade or so ago but now it doesn't seem to serve this purpose. Are there subs or groups or sites that people recommend? Or is it really just FB marketplace? Thank you!
