I can only seem to get a good extraction coffee when i use less coffee grounds

I recently just got a moka pot and bought some coffee grounds from my local roasted. I fill the basket up with around 18g, without tamping, use pre boiled water, keep my gas stove on low, and doing the temperature surfing thing. Doing this, i get some very sour coffee.

Then, when i thought that i might be underextracting the coffee, i reduced the amount of coffee grounds i used to 13g, still brewing with the same amount of water, and i got a less concentrated, but better extraction than before. But it still tasted sour so i went down to 8g and it tasted great but didnt taste strong.

I use medium roasted beans , they were freshly ground when i bought them. The grind is near espresso but coarser

I also noticed that while I was pouring coffee from the pot, there was some coffee leaking out of the middle of the pot. I think the gasket isnt doing a great job at sealing the bottom and top part together.

Why is my coffee still sour?

I recently got a moka pot, and bought some freshly ground arabica blend beans. I use James Hoffman's method of brewing in a moka pot. Idk what mistake could i have done to get sour coffee at the end

Im new to this coffee thing so I dont really know what to look for in the taste of coffee

EDIT: My coffee is ground fine, maybe close to an espresso, and around a medium roast
