





In a sea of kamado posts, please let me show off my first attempt at a low and slow cook
I decided to try out some beef short ribs for my first attempt at a low and slow cook. Snake method worked a treat. Bark was great. 7 hour cook where I managed to stabilise the temp at about 135 for the whole thing. I didn’t wrap but gave it a spritz when required. Hardly took the lid off during the early stages which I think added to the result.
All I wanted was a lovely result and to be able to see a smoke ring, and I was so happy to see one! Only downside is that ribs came apart whilst trimming so I didn’t get to cut down between the bones, but I’m still happy with how it looks.
Chucked in a tray with veg and fat trimmings as a base for some gravy, which was finished with some red wine, stock, lemon juice and butter.
Massive boost in confidence and I’m already planning my next cook.
