looking for rural places to visit without a car and general advice

19F. will be going there in june and i don't have a driver's license, but i'm not really interested in the crowded city life or nightlife of thailand. i want eat good food, be around locals, and go on scenic walks. i'm an anthropology major, so i am actually interested in actually observing the culture, history, family dynamics, traditions etc. beyond just avoiding "touristy" places. i will be visiting some of the touristy stuff if i find them interesting enough. but yeah, i want to see rural thailand.
