I'm looking for a roof terrace/bar with a view, I'm hosting a small event, drinks for ≈50 people Friday 2nd July 2027, and are happy to just have a corner area of a busy bar.

I've emailed just about every roof terrace in Florence, and they all insist we pay for an open bar in advance (≈€50-€100 euros per person minimum).

We were hoping to pay a deposit/minimum spend that's refunded when our guests have paid for all their drinks so that I'm not paying for everyone, but this doesn't seem to be an option! It's pretty common in London.

Any recommendations on where might accept this sort of arrangement?
