TWOV exit Shenzhen by train?

Firstly, I successfully got into the country by showing a ferry ticket out of Shenzhen to Hong Kong. I originally had a train ticket but my arrival card asked me to choose as a port of exit either Shenzhen airport or Shenzhen ferry port (but not Shenzhen train station) so I panicked and bought the ferry ticket, and chose Shenzhen port as the point of exit.

I was wondering if I could still take the train, as it seems a lot easier and faster. Or is the train (as is suggested by the arrival card) not a valid exit? Or do they get weirded out if I take a different way out of the country than I said?

I have the following plan and by all accounts it should work but I'm really worried. How does this sound:

June 8th: Arrive China (from USA)

June 11th: Take high speed train to Hong Kong

June 11th: Take high speed train out of Hong Kong

June 21st: Leave China (through Vietnam to USA)

Both trips are less than 10 days* and it's not the same port of entry.

* Technically the second trip is 11 days but they count the 240 hours from 12:00am June 12th.

My friend and I (we're in our 20s) are planning a 6-day trip (very soon) to Taiwan. I've been twice, but this time, our goal is to have tea seeing and/or making and/or drinking experiences. I have been to Shyangyeu tea farm in Yilan and it was fun and their tea was good, but I would be interesting in going somewhere new. Is there anywhere on the east coast (farther south) that you recommend for tea-related activities? I haven't been down the east coast and would be interested in an excuse.
