Gear advice for a beginner

I love taking photos of animals and birds while hiking. Until now I have just used my phone but I'm starting to find it quite limiting, a photo of a flying vulture just looks like a black blob. So I'm looking at buying some actual camera gear. But I'm finding it a bit overwhelming trying to naviate the vast amounts of lenses and cameras that are available. I'm trying to find a good balance between the gear being as lightweight and portable as possible to not be too much of an inconvenience for multiday hikes, while at the same time being able to have an ok level of zoom, preferably being weathersealed and be able to take photos that don't require me to do a lot of editing. From my understanding om systems seems like what you need if you plan to be in some more wet conditions. I was looking at buying a used om-3. But I don't know if that is an unnecessary amount to spend on a camera given my limited experience or if it's better to go for a om5 mark ii instead. Or what kind of lenses to pair it with. For budget im flexible but I'm a big fan of good value. If anyone has any advice for gear combinations it would be greatly appreciated
