This dessert is heavy and decadent. The sugar crash I had a few hrs later was insane. Napped like never before! Love the sticky rice texture, coconut milk flavor, and the sweet taste of the rice. I ate this with both Alphonso and Payari mangoes from India. Payari mangoes incredibly sweet like Alphonso, but have a slight tangyness to them that help cut the sweetness of the rice a little. Overall, it is easy to make (especially if you're using Jasmine rice). You can cook the rice directly in the coconut milk, sugar salt, and a little water.... If you're using actual sticky rice, you have to soak it overnight, steam it, and cook the sweet coconut milk separately and combine ideally when both are hot and leave it for even more time soak properly.
I used Jasmine rice here since it was quicker. My reference was Nin's cooking on YouTube here is the video I used for reference
Edit : Many have pointed out that Jasmine rice is incorrect. If you feel this is incorrect you could also comment what I can use in place of Jasmine rice. For context I don't have access to Thai sweet rice where I live. And local sticky rice variants have a different starch composition making them gloopy and mushy. The grains just collapse really easily.
Edit: Title should be Rice Pudding with mango as per whatever most people are saying.
