Is the warrior a tank, cleric a healer, and rogue/mage dps only or are there ways to play them as other roles?

Or am I thinking about this completely wrong and this game doesn’t use the holy trinity system?

I’m curious if there will be endgame activities such as difficult content and gear to grind for?

After completing the main campaigns and stories are there any end/post game activities to keep us playing?
