I always felt like I’ve had to babysit the WSM but today’s cook it just held at 125 for most of the cook and we got some solid pulled pork!!!

first time doing a tri tip today on my WSM. took it to 45c then seared till 55c and then rested. the initial smoke happened way faster than I expected. only about 45mins. WSM was at 115.

question. should I have pulled it earlier? Taste was great, just wish I was more tender in places.

any advice?

had a flare up and was attending to the children came back to this? can I get it working again?
