can't wait until the seed get ripened

I got all these from my titan sunflower last year and Im notcreally sure what to do? maybe start an army of sunflowers around town ?

Growing my first sunflowers and the first one is ready to harvest soon! My neighbor who gave me the seeds didn't know what kind it was. Would these be ok to roast and eat?
