For me, it’s between a tuna sandwich I had in Ireland with cheddar cheese, a tomato slice, crisp romaine lettuce, buttered multigrain bread, & tuna mayo salad, and a Thanksgiving leftover sandwich I made last year with sliced turkey breast, homemade cranberry sauce, homemade stuffing, gravy, a little bit of lettuce, and mayo on the bread. Also love a classic BLT, roast beef or turkey club sandwich, a pb&j, or a pb banana honey cinnamon sandwich.

I love making overnight oats, but stovetop porridge and baked oats are amazing too! Here’s how I make mine:

Overnight oats:
Quick cooking oats, chia seeds, ground flax, cacao powder
Add some hot water and stir
Mix in honey at this point so it melts
Add cinnamon & ground ginger
Add collagen, or chocolate plant protein
Let it cool, then add frozen blueberries, a splash of coconut milk, and top with sliced banana / other fruits!

Stovetop porridge:
Quick cooking or rolled oats & water in a pot over medium heat
When it starts bubbling, add chia seeds
Stir until it thickens
Then add in honey, cinnamon, ground flax, etc.
(Sometimes I’ll do grated carrots or grated apple for a carrot cake oatmeal! Or cacao powder for chocolate.)
Top with raisins, sliced medjool dates, banana, fresh berries, hemp seeds, and almond, coconut, or dairy milk

Baked oats:
Blend quick cooking oats, 1/2 a banana, ground flax, collagen, (cocoa if you want it chocolate flavored), honey, cinnamon, coconut milk, MCT oil, & baking powder/soda.
Pour into a lined baking dish.
Add some frozen blueberries and/or chocolate chips on top of the batter.
Bake in the oven/air fryer at 360-370 for the first 7-8 minutes, then drop temp to 350 for another 7-8 minutes. This makes it gooey on the inside and crispy on the outside!!
Once it’s done, add some yogurt, sliced banana, fresh berries, more chocolate chips, pb or honey drizzle, whatever you like!!

I got these from Lake Champlain! My favorites are the milk chocolate peanut butter truffles, hazelnut truffles, and white chocolate raspberry. The ones wrapped in foil are their Vermont chocolates, I believe they’re honey caramel, fruit & nut, mint crunch, and maple crunch..? All incredible flavors.

For me, it’s chocolate birthday cake, with chocolate frosting and either chocolate covered strawberries or chocolate cherries on top.

Also love carrot cake, chocolate lava cake (especially served with vanilla ice cream), red velvet cake with vanilla frosting, lemon cake with cream cheese frosting, Christmas cake with dried fruits and lots of spices, and cheesecake (if you wanna count that).

What’s your favorite cake flavor? Do you serve it with anything in particular? Frosting/icing/some sort of ganache, or plain?

I love cheerios, chocolate Rice Krispies, or even just plain oats with raisins, bananas, & milk… or muesli! Have never tried a lot of the generic cereal brands so I’m wondering which ones people like best!

Is the BLT the most overrated sandwich of all time?

Not sure if this is controversial or not, but I just read an article as to why the BLT is the best sandwich of all time. In my opinion, bacon is a good complementary meat on a sandwich or burger but can’t stand alone as the only meat. I think you need some chicken on there to balance out the meat/veggie/bread ratio. Thoughts?

What foods do you eat regularly, purely for their health benefits?

I love adding in fruits for vitamin C and antioxidants, and I eat things like bananas and oranges for digestive health. I drink coconut water for hydration, and add ground flax/chia seeds to my oatmeal for fiber. I love raw honey, elderberry concentrate, and ginger root for immune protection!!
