For those who live in the LA area, there's a popular Korean restaurant chain called Sun Nong Dan.

They have this beef brisket dish that is the most moist beef brisket and succulent beef brisket I've ever had.

I'm a pretty avid cook and I've never made beef brisket taste like this. Beef brisket is usually is on the tough side and falls apart when you boil it too long.

I'm guessing they brine it to achieve this consistency? Any expert Korean chefs know?
