where would you eat if you only had one dinner in Lyon?

hey there, visiting Lyon in may and have been doing a ton of research into where to eat. we will only be there two days and I’m trying to capitalize on good places.

we have reservations for lunch at La Mere Brazier and Daniel et Denise.

one dinner reservation is at Circle Restaurant. for the other dinner I’m torn between Los Loges, l’Etabli or Rustique. has anybody been to all three or can anyone help me choose. or if anyone has similar recommendations please let me know
