Words couldn't describe.

My granddaughter and I used a recipe we found on Reddit but made some minor tweaks.

We started with bacon in our #8 Erie.

We poured out the Bacon grease and brushed a little on top of the pre-softened potatoes after they were smashed.

We used fresh Swiss Chard instead of Spinach.

We added Red Onion with the Orange Bell Pepper.

We almost always use water instead of milk to whisk our eggs.

We added the Bacon pieces after pouring in the egg mixture.

The cheese was shaved Monterey Jack and Colby.

It was cooked at 400°F for 27 minutes then 4-ish minutes on a Medium to Med/High burner just in case the potatoes weren't crispy enough.

It was served with Sour Cream and Medium Salsa.

There's a good chance there will be no leftovers!
