Does zucchini freeze well?

Specifically, I'm thinking about shredding a bunch of zucchini, then freezing it for later. I love to throw it into all kinds of dishes to bulk up the veggies. Would it turn to mush if I did that?

I was looking for some kind of gelatin whipped dessert idea, and I found a recipe that's literally just 8 oz of cool whip with the gelatin folded in. The flavor is fine, but I should have done the math first because it's 500 calories for the whole bowl, not really worth it, imo
