How do new coffee drinks become “standard” menu items?

Drinks like lattes and cappuccinos have been around forever.

All of a sudden flat whites started popping up everywhere.

Obviously there are a gazillion popular and innovative coffee combinations . . . what made "flat white" (for example) become a new "standard" globally?
