Can you use gesso as a substitute for white paint? I mean I assume you can based off how it applies and dries but are there any drawbacks? Thanks!

Can someone explain to me the point of underpainting? I see a lot of people in videos doing it, but then I also see people say that it’s not necessary. How do you know what color to use? (Yes I know I can google this, I just want to hear the different perspectives of artists)
