I am listing the recipe per 1 serving! I made 3x this to prep it for the next few days.
8oz chicken breast … cut it into pieces, pound them flat and season with Italian seasoning, bake on a sheet pan with foil at 400F.
I make a quick fresh tomato sauce which is 1tsp olive oil, a chopped garlic clove, 3 diced campari tomatoes, salt and pepper and just sauté it while the chicken is baking. When the chicken is ready, take it out and top it with the sauce, add 3 ciliegine mozzarella balls (the little mini ones) and 2 tsp of grated parm. Bake it some more till the cheese melts and then top it with fresh basil. I served mine with salad after, ENJOY!!!!
