After slicing, do I soak in water for an hour to get rid of the startches? Then dry out and fry in oil? What's your trick?

Beginning my 36v lithium conversion...Anything I should know
Got the Temgo conversion kit...marked all of my wires, looks like I will need to deal with a new centered platform to keep the weight in the center. Any words of wisdom? I know the battery needs to be set to discharge, once I'm installed, but anything else? Appreciate the community help!
