
first time icing using piping tips - carrot cake cupcakes
As title says, these are brown butter carrot cake cupcakes I made for my mom for Mother’s Day. I love to bake but have always despised icing cakes as I’m not very good at it. So on my 2026 vision board I put that I would master cake decorating/icing; these are obviously cupcakes but it’s a good place to start! I’m super proud of myself and also want to give thanks as I scoured through this subreddit for hours taking down important information and looking for design inspo. I found out cream cheese frosting is not good to pipe with from this subreddit, I had no idea. I initially got frustrated because I selfishly wanted to practice my piping skills, my mom’s favorite flavor is carrot cake, carrot goes with cream cheese frosting…but cream cheese frosting is not good for piping 😂. Of course I wasn’t the first person to have this problem, sugarologie’s frosting worked as well as it said it would, I followed instructions to a T. One note is, while I did feel it’s very good for piping, it melted in the piping bag as I was going, which meant I had to ice quickly, or in batches. I successfully iced these 6 and then somehow colossally screwed up the rest of the icing by leaving it out too long (at that point, taking the icing out of the bags, re refrigerating and re whipping would’ve taken too long and I kind of gave up. If I hadn’t done research here I would’ve done normal cream cheese and the piping would’ve been a nightmare
