Dolly?

I'm filming a lot of events, and one of the difficult things is to get a smooth showing of a buffet, for example. I could use my gimbal just walking past it, but I guess that's not going to be smooth enough. I can add slow motion, which helps a bit more, and I can add IBIS (in-body image stabilization).

I am on a Sony camera, so I have also tried using stabilization afterwards with the gyro data, which is pretty amazing. Recently, I bought a dolly for my tripod, so I'm going to try that out, but I noticed that even small stuff on the floor will make it bounce. I don't know how successful this is going to be.

What is your solution for this situation where I have to do quick stuff but want a very smooth operation, and I am not going to use a professional Steadicam or anything like that?

Any success with the tripod dolly for indoors use?
