I'm used to tubers developing red eyes or buds. Like this one.

I bought a tuber that is still in the bag (second photo). It had two eyes that are green. One has broken off. Will the broken eyes re-sprout? Does the color matter?

Finally, in the third photo is one of my first attempts at dividing my own plants. This variety seems to be a slow bloomer and this seems to have a few eyes... but again, it seems to be coming in brown? am I wrong about the red eye business?
