Best bread option for long term?

Hi all,

I'm asking this question here as I'm a big faster and currently on an extended water fast.

I fast for health and weight reasons, primarily in looking to remedy long-term health conditions (CFS, seb derm, insulin resistance, gut issues).

I know avoiding bread where possible in my circumstance is the best recommendation, but I'm also aligned with the idea that "the best diet is the one you can stick to". I have little concern once I break my fast surrounding avoiding junk or processed food, other than the fact I am a bread fiend.

if I can find one that agrees with me and causes the least amount of issues I feel I'll be in a very good place going forward.

I've heard people talk about sourdough, ezekiel etc, but I'm just looking to gauge opinions on what people think is the best option for someone trying to be more health conscious and less inflamed to give me the best chance of sticking to a plan and meeting my goals after I refeed.

EDIT

Just as a caveat here, this bread would not be integrated anywhere close to my refeeding window! I have a plan for that already, and this'll be my fourth extended water fast
