

Huitlacoche with an egg,beef short rib and white rice
Was walking through our farm two days ago and spotted the corn smut, quickly harvested it and made a very hearty stew. I actually picked it at the best stage when it's really dark and has that inky,sorta sweet and earthy flavour similar to those of mushrooms. I dare say even better.
Very easy to prepare
