My first conversion upgrade, didnt realize how much material i'd have to remove to get everything to fit, i think basically every piece needed either several swipes on the stone, or a file. I got a little over zealous with the dremel removing material from the top of the trigger to get it to clear but other than that i reckon it came out ok. Really like the pinned beaver tail, and it fits super snug. Feels great in the hand too!
I live in Lubbock, Tx. In the 30's and 40's people from Lubbock would drive to Amarillo, Tx which is 2.5 hours away to get their alcohol. Then slowly but surely some of the tiny little Texas counties between Amarillo and Lubbock started to go wet, so that 2.5 hour drive became 2 hours, then 1 hour. Finally, Lubbock could see the inevitable, and in 1960, Lubbock County sectioned off an area of land southeast of town and designated it a "wet precinct". This precinct became known as "The Strip", given it's resemblance to Vegas, a road with a bunch of flashing lights out in the middle of the desert. Most people in Lubbock could get there in 20 minutes or less. It was about 3 blocks long and housed 6 or 7 liquor stores all in a row. The last liquor store on the strip was a spot called Pinkies and inside Pinkies was your normal selection of liquor, beer, ruffles potato chips, and chichirones, but at the back of Pinkies is where magic was made. They had a small BBQ restaurant where you could get some brisket, or some chopped bbq sandwhiches, which were all decent, but the real treasure was Pinkies pressure fried chicken gizzards smothered in Pinkies hot BBQ sauce. You can order gizzards anywhere else in the world and they wont be as tender or flavorful as a fresh pail of gizzards from Pinkies. My dad started taking me there when I was young, and while he and I never really saw eye to eye on most topics, one thing we did enjoy together was going to Pinkies. He would tell me about how when he was in his teens and twenties he could go to pinkies and get a pail of gizzards and a 6 pack of coors for less than $2.00. In 2009, I guess the formidable Baptist lobby in Lubbock caved because they decided to allow the city at large to go wet. Sadly, this would mean the end for the liquor stores on the strip. Pinkies had new spots in town now, right down the street, in nice new buildings, but none of them had the gizzards. The Pinkies on the strip held out for another 9 years until 2018, then they closed. SADFACE...No more gizzards. I thought about those gizzards often between 2018 and 2026, and about how those were some of the very few times my father and I bonded. Oh how I missed those gizzards. Then today I was in an uber going back to the Toyota service center to pick up my car and my driver was an early to mid 70 year old gentleman, and we were talking about how large Lubbock has grown, a very popular topic with any of the over 60 Lubbock crowd. "Where I live now used to be all cotton fields? You don't say..."...it never gets old though, i love those conversations. Inevitably the topic of the strip came up and I reminisced about Pinkies BBQ sauce and how much i missed those gizzards, at which point my newest favorite senior uber driver informed me that while Pinkies doesn't have the bbq shop in the liquor stores anymore, they do have a stand alone bbq store joined to an EZ stop on 4th and Toledo. The level of happiness that jolted through my body was immeasurable. He dropped me off and I grabbed my car and headed straight there. I asked the lady behind the counter if these were the same gizzards that were sold at the Pinkies on the strip, she replied "I'm not sure, they should be." I waited with anticipation for my pail. It was a loooooong 3 minutes. Bingo! Exactly how I remember them! Got so happy I went to take a picture, made a wrong move, and spilled bbq sauce all over the console of my car. It was like reacquainting with an old friend for the first time in several years. Today was a great day. I miss you dad.
