Creamy pasta fagioli w/ beef

I had two bowls, 630g, of this stew last night for ~480 calories, 30g protein, lots of fiber!

- 1 lb 93/7 ground beef

- 2 tbsp olive oil

- 1.5 yellow onion (i used all i had, one large is fine), diced

- 3 large carrots, diced

- about 3 large stalks celery, diced

- 4 cloves garlic, minced

- 1 (15oz) can tomato puree (save empty can!)

- 2 cans great northern beans, drained + rinsed

- 2 cups frozen chopped spinach

- 1/2 box (220g) ditalini pasta

- 4 cans water or broth

- salt, pepper, italian seasoning

Season ground beef with salt and italian seasoning. Heat a dutch oven or large stock pot over medium-high heat. Brown the ground beef, remove, and set aside, being sure to leave the grease in the pot.

Lower heat to medium, add in the olive oil and mirepoix and saute until tender. Once tender, throw in the garlic and saute about a minute. Add in the beans and saute about 30 seconds more.

Pour in the tomato puree and 4 cans of water/broth and mix well. Bring to boil then lower heat and simmer for 10 mins.

Remove 2 large ladles of veggies and beans and a bit of liquid, blend until smooth, and add back to pot in addition to the beef, spinach, and pasta. Mix well. Simmer for 10 mins or until pasta is tender, stirring occasionally to prevent sticking.

Salt and pepper to taste.
