Trying to build muscle on the carnivore diet.

I have PCOS and hence combine this way of eating with intermittent fasting 18:6 and I've had wonderful results so far. Lost most of my visceral fat. I only eat 2 meals a day.
I'm trying to maintain/ build muscle while I lose 8 kgs that is 18 pounds off my lower belly and I'm at my goal weight.
I lift weights 4 times a week and rest enough for proper recovery.
My diet:
Meal 1 at 8AM:
-6 eggs eaten as omelettes
-200g cottage cheese
-100gGreek Yogurt if needed or 100g butter or I'll skip both.
Meal 2 at 1PM:
-400 to 450g ground beef is all I can manage to eat for lunch
And then I'm full for the rest of the day. I can easily go the entire day without meal 2 as well or even multiple days fasted but there is no necessity for me to do so.
*My question*:
I work out at 7 PM in the evening fasted and don't eat anything until 8 AM next morning as I love sleeping empty stomach. I just started lifting weights regularly.
Is this meal plan okay to build muscle since I was told by my trainer to eat a meal post workout but I'm not hungry at all. I love being fasted before and after. I come back home at 9 PM and really don't feel like eating at all.
