Banana muffins, approved by my not-so-great eater!

I made these muffins to have for breakfast and snacks for the coming days, as well as to freeze. My baby is generally not a great eater, unless she's REALLY hungry, but she just ate almost 2 in one sitting. If you do make these, definitely push the blueberries into the batter more than I did, otherwise you'll end up with these virus looking muffins 😂

Before, after and mom's plate!

Tonight's dinner was a hit, which is a rarity with this baby! Mom and dad had chicken and rice bowls, but the chicken was marinaded in tons of (very sodium heavy) soy vey, so baby's plate used canned salmon instead. Rice, salmon, avocado, grated cucumber, smashed edamame and sesame oil for her main (which she loved!) and smashed strawberries with peanut butter and hemp hearts (which she hardly touched). Curious when, if ever, she'll go from "ew berries are tart" to eating her body weight in berries.
