½ cup Good Culture 4% cottage cheese, divided

½ oz (14g) cashews (or nut of choice), chopped
1oz goat cheese (or cheese of choice)
4oz grilled chicken breast (or tuna or shrimp)
2 tablespoons of Primal Kitchen® brand honey mustard (or 1 tablespoon of olive oil and up to 1 tablespoon vinegar of choice)

16 oz chicken breast
½ cup water
Salt & pepper, to taste
1 cup tomato sauce
6 oz mozzarella cheese
¾ cup grated parmesan cheese
½ teaspoon dried basil
½ teaspoon red pepper flakes

½ cup panko breadcrumbs
1-2 cups dark leafy green of choice (romaine lettuce, spinach, arugula, kale ) per serving
¾ tablespoon olive oil per serving for greens

Costco

I've been sticking to my meal plans which is a lot of protein- eggs, chicken, ground beef, Fage Greek yogurt, etc. And a lot of seltzers. Does anyone here have a Costco membership? I figured if I'm doing a lot of the same repeating proteins it might be better to buy in bulk. The only think I'm afraid of is if I buy in bulk and it's in the house (peanut butter) I might go rogue and eat it. Also how are you freezing and thawing packs of chicken if every meal is precisely measured out? On the fence if it is worth it

How are you guys budgeting for Costco?

I usually budget what I spend on groceries for two weeks and anything extra goes to my current goal (puppy fund, vacation, retirement etc) but I just got a Costco membership for bulk items and I will probably only go every 1-3x but spend a lot. What's the best route here?

I need some large fruit trays, maybe a lot of breakfast danishes, or even bagels and cream cheese cuts for 200 people. Costco didn't have anything like that. Any ideas? As budget friendly as possible

I only use one to 2 tablespoons of coffee creamer per day, so it usually goes bad before I can use it all. So what I have been doing is freezing half of the creamer. However I am starting to notice that once the coffee creamer has been thawed. It seems to go bad much quicker than the original fresh half. What should I do to utilize all my coffee creamer. Should I be freezing it in bags of small amounts or maybe in ice cube trays.
