Best way to melt ice without flooding the walk-in?

Usually this isn't an issue, but sometimes the entire back of the evaporator is a giant block of ice, and I need to melt a lot of that ice before water will actually get into the drain line. Result is, a lot of water. A lot of the Walk-ins I work in don't have floor drains either. I usually kind of just slowly melt the ice, put some pans down to catch the water, and vacuum and mop as needed. Anyone have a better strategy to save me some headaches in the future? Would be appreciated.
