I have a natural gas hook-up so I want a built-in griddle, a built-in deep fryer, and a stand-alone smoker. The griddle will be used the most. With a built-in, I won't be able to use the rear grease trap like I do now with my Blackstone. And round is out of the question although I've always liked the round griddle tops. For a "permanent" installation, is stainless steel the best option?
