How to prevent desertion while traveling to the crusade target?

There is a crusade for Tunis right now. I am playing Spain and have been marching my army from Granada through North Africa, etc. Every turn I have dozens of troops desert because I am not making sufficient crusade progress. I am marching as far as possible towards Tunis every turn except for taking time to fight the Moors (the owners of Tunis).

What's the deal? What are the mechanics at play here?

I foolishly thought I could keep a large city by simply occupying it (Lithuania can't upgrade their cities without converting). The populace revolted and it appears to have been a revolt led entirely by the local siege workshop.
