The difference between washed flour seitan chicken and seitan chicken made from vital wheat gluten is a night and day difference

I made two batches of seitan chicken, one with vital wheat gluten and another from washed flour so I could see the side by side comparison.
The lighter, juicer looking seitan on the right is from washed flour. The denser and darker seitan is on the left.
(In the fridge it’s the washed flour on the left, vwg on the right)

Flavor wise and texture wise I prefer washed flour. It’s so much better.
But.
The vital wheat gluten seitan took me less than half the time to make. It still tastes good, and has a decent texture.

Both of the seitans simmered on low for two hours in the same broth.
Both were flavored with vegan chicken bullion, only the vwg version was made with hummus- so it had more flavor and oil in it.
Even with the extra oil and flavoring from the hummus in the vital wheat gluten one- I still thought the washed flour seitan had a better flavor.

I thought you might appreciate the side by side because I thought my new easy seitan chicken recipe would be just as good as my washed flour seitan. But nope, while it’s still good, nothing can beat washed flour

In Berlin there’s a vegan Vietnamese restaurant that specializes in Tapas. It’s called 1990 Vegan, and has to be one of my favorite restaurants!
I love the idea of ordering a bunch of small bites to share and everything is really delicious!

This is the second time I’ve been here and there isn’t anything that I didn’t like, I really enjoyed everything I’ve tried so far.

We got breaded tofu on a stick with peanut sauce, sticky eggplant and tofu, dumplings in a mango sauce, bao bun burgers, seitan with green beans, and a small bowl of rice for everything to go together.
Last time I was there I had their kimchi (which I loved) and other varieties of dumplings.

Should I expect my neighbors to light off fireworks on May 1st?

I moved to Berlin with my dogs in December and saw the fireworks on NYE. Is May 1st similar to that or more tame?

I ask because my dogs are terrified of fireworks and I heard that May 1st is a big party day. I would love to go check it out and explore, but if there are a lot of fireworks I would need to stay back and care for my dogs.

What should I expect?
