i keep having trouble getting the outside steak seared while the insides come out medium rare , when cooking in pan , can you help?

i cook the outside too much the insides too rare . i cook on medium high heat for 3:30 minutes each sides. what should i do next time shut the heat down(then i'm stride it won't get good sear) or shorten the time i cook it , maybe to 3:15 seconds on each sides. it's tricky for me i keep doug the same thing over and getting medium rare.

how do i stop flipping and checking the inside temperature multiple times when cooking steak ?

when i watch youtube videos of people cooking steak they cook it take it out then take the temperature snd it's done .

when i cook steak i put it in a pan take it out and the temperature is low i have to put it back in take it out take the tenperusre again then maybe out it. ack in?

i do the same think for chicken . how do i cook the steak or chicken and take it out get the right temperature in the first try ? am i doing something wrong ?

edit : it's like i think i have to get the right tempurature in the first try
