As seems is usual with my adhd, i have gotten stuck in an analysis paralysis regarding which to go with. I’ve narrowed it down to the following 3: Hestan Copperbond, Demeyere atlantis, and Falk Copper coeur (open to other suggestions if there are strong opinions.) My main uses for this pan with be delicate sauces, reductions, and rissotos, in that order. I cook on gas, but induction in the future is possible. I do not really want to deal with the extra copper care so am hoping for stainless clad, and really prefer rivet-less designs but most important is performance. So i guess help narrowing down exactly how much better they will perform, and if performance trade off is worth the wants.
TLDR: Copperbond vs Atlantis vs Falk Coeur which ones perform the best, and how much better are we talking.
