Five spice chocolate mousse entremet (?), chocolate cake and crumb, mandarin peel jelly, peanut and Sichuan peppercorn praline.
I’m a culinary student/commis chef trying to learn some new skills at home - I’ve entered for an upcoming competition and am freaked out since it’s my first time. Would really appreciate any feedback on plating, flavours, technique etc for this dish!
