Will clean install remove parition data as well

Im moving from windows 11 have a 1tb ssd which is partitioned into C, D, & E drive , when going for clean install will it also erase data from D and E or will it show an option to install in the C drive? Sorry if its too nub of an question.

What to install regular version vs nvidia?

I have an old potato laptop which runs windows 11 and im done with all its system resource hogging its got an geforce mx 150 and intel i5 8th gen

Not sure where it lands on the OS recommendation between these two
