Replace old trim and hardware or full shower/bath set with new valve

I have one of these old Moen valves and I know I can get an adapter for $25 so I can use Moentrol style trim kits, but I'm finding plastic junk for trim or kit's that I'm not 100% sure will work for damn near the cost of a complete new unit. The only issue is removing/replacing the valve.

It's possible to get to the back of the unit through a closet, but is it worth the trouble? Any good looking trim kits that will last (brushed nickel)?

Who built this wall, and can it be fixed?

I have to at least patch the hole in the wall from the old medicine cabinet, but I'm contemplating just pulling out the drywall from the corner to the door and replacing it all, but it's so ridiculously out of plumb. The vanity is going up against it and I'd rather not have a huge gap at the top. Any suggestions other than tear-out and reframe?
