First attempt tonkotsu shoyu ramen
12 hour simmered pork neck, femur and trotter + a halved lamb femur. Marinated pork belly. Quick shoyu tare (soy, sake, mirin, kombu, garlic and ginger). Soy marinated egg. Finished with a few dashes of chilli oil and sesame. I'm sure not traditional, but I liked it.
