Building a budget Steam Deck-like setup for the first time - will it work well?

I’m planning to build a very budget handheld gaming setup.

The idea is to buy a cheap tablet DOOGEE T20 Mini, which has an 8.4-inch display, an IPS panel, 1920×1200 resolution, a 16:10 aspect ratio, and a pixel density of about 240 ppi. It also supports dual-band Wi-Fi (2.4/5 GHz) and Bluetooth 5.0.

I also plan to buy a GameSir G8 Plus controller, preferably second-hand to save money.

I’m planning to use this setup mainly for game streaming via Moonlight over a local network, and occasionally over the internet.

Main questions: How well will this work in practice?

Are there any downsides or questionable aspects of this setup?

I’m especially interested in real-world experience with input lag, comfort, and overall stability.
