Located in Tama City, Tokyo, there is a ramen shop called 'Horaiken.' It’s a hidden gem that even most locals don't know about, let alone international visitors. The shop opens at 10:00 AM, and a line starts forming immediately. I highly recommend their signature 'Stamina Ramen'.

It's from a restaurant run by a butcher shop, so it was amazing!

Unlike the heavy tonkotsu or trendy flashy ramen, this place pursues the ultimate "standard" Shoyu Ramen. The soup looks incredibly clear, but it has a deep, rich umami that hits different. Every single component is perfectly balanced. It’s located near Ochanomizu station if you ever visit Japan.
